Chicken Do Pyaza
Chicken Do Pyaza is a classic North Indian favourite, celebrated for its signature double-onion preparation. Tender chicken is cooked in a rich onion and tomato-based gravy, while chunky onion petals add a delightful crunch and natural sweetness. Ingredients
For Marination
- Chicken Curry Cut – 800 g
- Thick Curd – ½ cup
- Ginger Garlic Paste – 2 tbsp
- Kashmiri Red Chilli Powder – 1 tbsp
- Turmeric Powder – ¼ tsp
- Salt – to taste
For the Gravy
- Oil – 3 tbsp
- Butter – 1 tbsp (optional)
- Onions – 4 medium (2 finely sliced + 2 cut into petals)
- Tomatoes – 3 medium, finely chopped
- Ginger Garlic Paste – 1 tbsp
- Green Chillies – 2, slit
- Kashmiri Red Chilli Powder – 1 tbsp
- Turmeric Powder – ¼ tsp
- Coriander Powder – 2 tsp
- Cumin Powder – 1 tsp
- Garam Masala – 1 tsp
- Kasuri Methi – 1 tsp, crushed
- Fresh Coriander – for garnish
- Salt – to taste
Recipe
- In a bowl, marinate the chicken with curd, ginger garlic paste, Kashmiri red chilli powder, turmeric, and salt. Let it rest for 20 minutes.
- Heat oil in a pan and sauté the finely sliced onions until golden brown.
- Add ginger garlic paste and green chillies. Sauté until the raw aroma disappears.
- Add chopped tomatoes, Kashmiri red chilli powder, turmeric, coriander powder, cumin powder, and salt. Cook until the tomatoes soften and the oil begins to separate.
- Add the marinated chicken and cook on medium heat for 8–10 minutes, stirring occasionally.
- Cover and cook until the chicken is tender and fully cooked.
- In another pan, lightly sauté the onion petals until they soften slightly while retaining their crunch.
- Add the sautéed onion petals to the chicken along with garam masala, crushed kasuri methi, and butter. Mix gently and simmer for 3–4 minutes.
- Garnish with fresh coriander and serve hot.
