Achari Chicken
Achari Chicken is a bold and flavour-packed North Indian delicacy inspired by the tangy spices used in traditional Indian pickles. Ingredients
For Marination
- Chicken Curry Cut – 800 g
- Thick Curd – ½ cup
- Ginger Garlic Paste – 2 tbsp
- Turmeric Powder – ¼ tsp
- Kashmiri Red Chilli Powder – 1 tbsp
- Salt – to taste
For the Gravy
- Mustard Oil – 3 tbsp
- Onions – 2 medium, finely sliced
- Tomatoes – 3 medium, finely chopped
- Ginger Garlic Paste – 1 tbsp
- Green Chillies – 2, slit
- Fennel Seeds – 1 tsp
- Mustard Seeds – 1 tsp
- Nigella Seeds (Kalonji) – ½ tsp
- Fenugreek Seeds (Methi) – ¼ tsp
- Cumin Seeds – 1 tsp
- Coriander Powder – 2 tsp
- Turmeric Powder – ¼ tsp
- Kashmiri Red Chilli Powder – 1 tbsp
- Garam Masala – 1 tsp
- Curd – ¼ cup
- Kasuri Methi – 1 tsp, crushed
- Salt – to taste
- Fresh Coriander – for garnish
Recipe
- In a bowl, marinate the chicken with curd, ginger garlic paste, turmeric, Kashmiri red chilli powder, and salt. Let it rest for 20 minutes.
- Heat mustard oil until it reaches its smoking point, then let it cool slightly.
- Add mustard seeds, fennel seeds, nigella seeds, fenugreek seeds, and cumin seeds. Sauté for a few seconds until aromatic.
- Add the sliced onions and cook until golden brown.
- Stir in ginger garlic paste and green chillies. Sauté until the raw aroma disappears.
- Add chopped tomatoes, coriander powder, turmeric, Kashmiri red chilli powder, and salt. Cook until the tomatoes soften and the oil begins to separate.
- Add the marinated chicken and cook on medium heat for 8–10 minutes, stirring occasionally.
- Add the remaining curd, garam masala, and crushed kasuri methi. Cover and simmer until the chicken is tender and the gravy is thick and flavourful.
- Garnish with fresh coriander and serve hot.
